#2 – Patriotic Summer Ale

Stats:

Ingredients:

  • 1 lbs white wheat malt
  • 3 lbs DME, CBW Golden Light
  • 3 lbs DME, CBW Bavarian Wheat
  • 1.4 oz Saaz hops pellets (5 AAU)
  • 2 g grains of paradise
  • 0.8 oz fresh lemon zest
  • 1/4 oz Hallertau hop pellets
  • 5 oz priming sugar (Glucose Monohydrate/Dextrose)
  • 11.5 g Safbrew WB-06 dry wheat beer yeast

Steps:

  • Steep malt in 2.25 gal H2O at 155F for 15 min. Boiled added extract and Saaz for 1h. Added lemon zest and grains of paradise after 45 min. Added Hallertau after 55 min. Strained. Added cold H2O to 5 gal. Cooled overnight in ice water bath. Sprinkled yeast on top at 73F. 1.053
  • 7/21/14: Brought up from basement where it was 70-72F. Racked to carboy and added priming sugar (boiled with 1 c H2O). SG 1.016. Bottled with dishwasher sanitized bottles. Labels removed with Oxyclean! 12 large bottles, 30 small bottles (624 oz_
  • 8/8/14: Tried 4 bottles. Delicious. Clear golden ale. Definitely taste the lemon. Cross between Sam Summer, UFO, Alagash White. Hint of hops. Slightly too much carbonation. Noticeable sedimentation.
  • Bottels tended to over carbonate and produced lots of head. Perhaps needed to ferment longer before bottling.
