Based on Modern Homebrew’s manager, Emon, 3 time award-winning recipe he gave me.

Ingredients:
- 7 lb Muntons Plain Light DME
- 0.5 lb Crystal 40
- 1 lb Flaked Wheat
- 0.5 oz Cascade @ 5.4%, 60 min
- 2 oz Amarillo @ 8.6%
- 2 oz Citra @ 13%
- 1 oz Vic Secret @ 21% (Australian hops like Galaxy but not as “dank”)
- Imperial Yeast A24 Ale
Steps:
Steeped crystal and flaked wheat for 30 min at 150F in 2 gal H20. Brought to boil added DME and cascade. Boiled 60 min. Cooled and added 1 oz each of Amarillo and Citra @180F. Cooled to 90F. Added H20 to OG of 1.057 at 68F, about 5g total. Stirred to airate and pitched yeast.
5/14/18 – Added 1 oz Amarillo and Citra on top. Stirred to mix.
5/20/18 – Fermentation has mostly stopped. Racked to carboy and added 1oz Vic Secret. 1.017@68F.
5/25/18 – 1.016 @ 70F. Racked to keg filled with CO2. Purged CO2. Pressurized to 2.5 volumes CO2. Tastes delicious, both Sarah and I liked it. Glad we didn’t use 2 oz Vic Secret recipe called for. One of our favorite homebrews. Which we made more.
