#19 – Apple Cider #2

Eamon at Modern Homebrew suggested this ale yeast for more apple/fruity flavor. Cider #2 also carbonated in the bottles, unlike our first cider.

Stats:

  • 5 gal
  • OG: 1.0555
  • FG: 1.0025
  • ABV: 6.9%

Ingredients:

  • 5 gal unpasteurized cider
  • 11 g Lallemand Nottingham Ale Yeast (dry)
  • 8.3 oz corn sugar
  • 5 g yeast nutrient, Ferm Aid K
  • 0.3 oz (2 tsp) Acid Blend – citric, malic, tatric

Steps:

  • Added sugar, nutrient, and acid. Stirred to blend and aerate.  OG 1.056 @ 52F = 1.0555. Sprinkled dry yeast over juice.
  • 10/29/17 – 1.002@64F = 1.0025
  • 11/5/17 – Primed with 3/4c cane sugar boiled with 1c H2O. Bottled into 9x 22oz bottles and 33x 12 oz bottles.
