Based on a mix of No. 4 Shay Steam from How to Brew and Uncommonly Lucky from Brewing Classic Styles

Ingredients:
- 6 lb Mutons Plain Light DME
- 0.75 lb Crystal 40
- 0.5 lb Victory 28
- 0.25 lb Malodextrin Powder
- 2 oz Northern Brewer @ 7.5%, 1 oz @ 60 min, 0.5 oz @ 15 min, 0.5 oz @ 1 min
- WLP810 S.F. Lager Yeast
Steps:
- Steeped crystal and victory in 154F 2.5 gal H2O for 30 min.
- Boil 1h, splitting the malt with 3 lb at 60 min and 3 lb at 15 min “knockout”. By adding some later, the beer should stay lighter with less caramel flavor.
- Cooled and strained into primary fermenter. Added cold water to 69F. Stirred to aerate and pitched yeast.
- Kept upstairs for 6h to get fermentation started then moved to ~60F basement
- 6/17/21 – Racked to Keg. Seems like maybe didn’t get a full fermentation. Beer tastes good. Tastes a bit like an english bitter. Malty plus hop notes. Carbonated to 2.8 L CO2.
